Suggestions

Hello, everybody!
So, I haven't really been baking lately for two reasons:
1) The only times I can really bake is over the weekend, and the kitchen has been being used the past few weekends
2) I don't know what to bake

I have a recipe book I bought in Spain, and I could use some of those recipes, except for the measurements are all in grams and kilograms and celsius, and I need some help with the Spanish baking lingo.
But anyway, I just wanted some suggestions. What kinds of things would you like me to bake? It doesn't matter if its a kind of cake, I can take a cake recipe and turn it into a cupcake recipe. So, please, comment with some of your favorite things, and I'll try to find a recipe to make them.

My Batter Bottle ( alliteration/ tongue twister)

This is a bottle I bought recently. How it works is: you pour the batter into the bottle,
then, you screw the cap back on and the batter comes out of the top. This makes the
cupcakes come out smoother topped! I used the bottle on the lemon cupcakes. You can
see the picture if you would like to see the results :)


My Cupcake Liners!

These are my cupcake liners!! I actually don't know why I am posting this now, seeing as I got these a few months ago. Anyways, they are silicon, so I can just reuse them! They are a bit difficult to wash, but you don't even need a cupcake tin to bake in :)
I have made many a cupcake in these XD

Raspberry Vanilla Cupcakes

This is a recipe I invented (sort of). The vanilla part is from the Joy of Baking website, and I added the raspberries.

INGREDIENTS


1/2 cup unsalted butter, room temperature
2/3 cup  granulated white sugar
3 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups (195 grams) all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup milk

INSTRUCTIONS

Beat together the eggs, sugar, and butter, and vanilla extract. Then, in a separate bowl, mix together the flour, baking powder, and salt. Alternate pouring the flour mixture to the batter with the milk.  Melt a small bowl full of frozen raspberries. Then, pour that into the batter. Mix together with a spoon. Pour into cupcake tins. Makes about 12 cupcakes.

Chocolate Chip Cookies

This is a recipe for classic chocolate chip cookies. The recipe is from Mark Bittman's How to Cook Everything.


INGREDIENTS

2 sticks unsalted butter
3/4 cup granulated sugar
3/4 brown sugar
2 eggs
1/2 tsp baking soda
1/2 salt
2 cups all purpose flour
1 tsp vanilla
2 cups chocolate chips

INSTRUCTIONS

Mix together the sugars and butter. Beat eggs in one at a time. In a seperate bowl, mix the rest of the dry ingredients. Add to the other mixture. Mix well. Add in vanilla and chocolate chips. Bake at 375 F for about ten minutes. Let cool.

Carrot Cake Cupcakes

This is a recipe for carrot cake cupcakes. The recipe is actually for carrot cake, but I just made them in cupcake format.  This recipe is from our neighbor, so I don't know what cookbook.

INGREDIENTS
2 cups sugar
2 cups flour
2 tsps baking soda
2 tsps cinnamon
2 tsps salt
1 1/2 cups vegetable oil
3 cups grated carrot
4 eggs

INSTRUCTIONS

Mix the dry ingredients together. Then, add the oil and eggs. Mix. Add the carrots. Beat together at a medium speed until well mixed ( about 2 min). Preheat the oven to 350 degrees F.  Pour into cupcake molds or two 9 in cake pans. Bake for 25-30 minutes.
The frosting is the cream cheese frosting recipe.

Lemon Cupcakes

These are lemon cupcakes from a website called mybakingaddiction.com.


INGREDIENTS


2 1/4 cups cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups buttermilk
4 large egg whites
1 1/2 cups sugar
lemon zest from two lemons
1 stick (8 tablespoons) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1/2 teaspoon pure lemon extract


INSTRUCTIONS



Preheat the oven to 350 degrees celsius
Mix together the flour, baking powder, and salt
Mix together milk and eggs.
Knead together the lemon zest and the sugar until moist and fragrant. Add the butter and beat together until very light. Add a third of the dry ingredients. Beat. Add half the egg and milk mixture.Beat.  Keep doing that until there is no more of each ingredient left.
Mix the batter for another two minutes to make it smooth.
Bake for 18-22 minutes.
MAKE CREAM CHEESE FROSTING RECIPE AND ADD THE JUICE OF ONE LEMON
