Lemon Cupcakes

These are lemon cupcakes from a website called mybakingaddiction.com.


INGREDIENTS


2 1/4 cups cake flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups buttermilk
4 large egg whites
1 1/2 cups sugar
lemon zest from two lemons
1 stick (8 tablespoons) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1/2 teaspoon pure lemon extract


INSTRUCTIONS



Preheat the oven to 350 degrees celsius
Mix together the flour, baking powder, and salt
Mix together milk and eggs.
Knead together the lemon zest and the sugar until moist and fragrant. Add the butter and beat together until very light. Add a third of the dry ingredients. Beat. Add half the egg and milk mixture.Beat.  Keep doing that until there is no more of each ingredient left.
Mix the batter for another two minutes to make it smooth.
Bake for 18-22 minutes.
MAKE CREAM CHEESE FROSTING RECIPE AND ADD THE JUICE OF ONE LEMON

Oreo Cupcakes

I got this recipe from another blog- The Beantown Baker

These are pretty good!!!!


INGREDIENTS

My cupcakes!
1 stick unsalted butter, at room temperature
1 cup milk
2 tsp vanilla extract
2 1/4 cups flour, plus 2 Tbsp for the Oreo chunks
1 tsp baking powder
1/2 tsp salt
1 2/3 cup sugar
3 large egg whites, at room temperature
1 pkg Oreo Cookies


INSTRUCTIONS
( Makes 24 cupcakes) 
Twist 24 cookies apart, leaving one side with frosting and the other without. Cut the parts without frosting in half. Next, in a bowl, cream the butter until fluffy. Pour the milk and vanilla and mix. In a separate bowl, mix the flour, salt, baking powder. Add the butter mixture to the flour mixture. Mix together. Then, beat in the egg whites. Stir in the cookie chunks.
Then,on the cupcake molds, put the half of the cookie with frosting on the bottom, frosting side up. Pour in the batter about 3/4 full. Bake for about 20 min or until a toothpick comes out clean.
FOR THE FROSTING, USE THE CREAM CHEESE FROSTING RECIPE AND CRUMBLE COOKIE ON TOP!!! :)

Chocolate Cupcakes

This is a recipe for chocolate cupcakes. It is my grandma's recipe for yogurt cake, and my cousin added the chocolate.  I think she made it up, so they're not exact measurements. But they are really good!

INGREDIENTS

3 eggs
1 plain yogurt
Flour
sugar
baking soda
powdered chocolate (like the kind used for hot cocoa)
vegetable oil

INSTRUCTIONS

Preheat the oven to about 375 degrees Fahrenheit  Pour the yogurt into a bowl. Now, pour in 2 yogurt cups of flour. Pour in 1 yogurt cup of sugar. Pour in 1 yogurt cup of vegetable oil. Pour in 2 1/2 yogurt cups of chocolate. Put in the eggs. Pour in 16 grams of baking powder. Beat it all together until its smooth. Put in the molds.  Then, put the oven temp to about 330 (sorry the measurements are kind of random- they are conversions from Celsius)  and bake for five minutes. Then, take the temperature, and lower it to about 320 degrees F and bake for twenty minutes or until you stick a toothpick in and it comes out clean. ENJOY! :)

Gingerbread Cupcakes

This is a recipe for gingerbread cupcakes. The recipe is from King Arthur Flour.


Ingredients

1 3/4 cups all purpose flour
1 tsp baking soda
My frosting was too runny because I added too much milk.
They aren't very beautiful, but they are tasty!
2 tsp cinnamon
2 tsp ginger
1/4 tsp cloves
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 cup unsalted butter, melted
1/2 cup packed dark brown sugar
1/2 cup molasses
1 egg
1/2 cup water

Instructions

 Preheat the oven to 350 degrees Fahrenheit. Combine the flour, baking soda, cloves, nutmeg, cinnamon, ginger and salt. Mix together. In a separate bowl, whisk together the melted butter, sugar, molasses, and egg. Add half the water and half the dry ingredients. Mix well. Add the other half of the water and the other half of the dry mix. Mix well.  There you have the batter.

Serves 12 regular cupcakes and 24 mini cupcakes.

 For the frosting, just take the cream cheese frosting recipe and add two teaspoons of cinnamon.

Cream Cheese Frosting

This is recipe for cream cheese frosting. I don't know where the recipe is from though.

INGREDIENTS

1 package ( equivalent to 8 oz) of cream cheese
1 stick of butter
1/ 2 box of powdered sugar
1 tsp of vanilla.

INSTRUCTIONS

Cream the cream cheese and butter until it's light and fluffy. Add the sugar gradually. Add the vanilla.

ENJOY!

PS. I always add less sugar. It's way too sweet ( at least for my taste and the taste of those who consume my food) if not.  Maybe just a cup or 1/2 cup. The consistency is the same, and the taste is good too!!

Butter Frosting

This is just a simple butter frosting. I got the recipe from How to Cook Everything  by Mark Bittman.

Ingredients

  • 8 tbsp (equivalent to 1 stick of butter)
  • 4 cups of powdered sugar
  • 6 tbsp of milk
  • 2 tsp vanilla extract
  • pinch of salt
Instructions

Use an electric mixer to cream the butter. Gradually add in sugar and milk. Stir in the vanilla and salt.

Enjoy!
PS. I usually add about half the amount of sugar, or else its really sweet, but that's just my preference.
